FIVE-SPICE SALMON WITH WARM POTATO SALAD
Serves 4

What's for dinner? 5 family meals for $100 - Five- spice salmon with warm potato salad

Ingredients

650g baby potatoes, washed,halved if large
4x 160g salmon fillets, skin on
1¼ tsp five-spice powder
Handful coriander leaves,chopped roughly
3 celery stalks, diced (see tip)
1 bunch chives, chopped
2 tsp white wine vinegar
1½ tbsp olive oil
A few drops of sesame oil

Method

Bring saucepan of salted water to the boil. Cook potatoes for15 minutes, until just tender. Drain well.

Spray salmon fillets with olive oil and rub both sides with five-spice, salt and pepper.

Heat a non-stick frying pan on medium. Cook salmon skin side down for 4-5 minutes. Turn and cook another 3-4 minutes for medium or until cooked to your liking. (This timing is for a belly piece of salmon – if you prefer the tail end, cook 3 minutes skin side down, turn and cook for a further 1-2 minutes)

Meanwhile, place warm potatoes ina mixing bowl. Add coriander, celery and chives.

Drizzle with olive oil, vinegar and sesame oil. Season salad to taste, then toss well to combine.

Spoon potato salad onto plates and serve with salmon.
