PIZZA: Cheese & cauliflower gluten-free pizza

Cheap this week...Cauliflower - Cheese & Cauliflower Pizza


1 medium cauliflower, cut into florets
½ cup grated cheddar
½ cup grated parmesan
¼ cup thick tomato passata
1 egg, lightly beaten
1 chorizo, thinly sliced
½ red onion, finely sliced
¼ cup chargrilled capsicum strips
100g baby bocconcini, drained
Fresh basil leaves to serve


Preheat oven to 2000C (1800C fan-forced). Line a large pizza tray with baking paper.

Place cauliflower in a microwave-safe bowl. Cover and microwave on high for 8-10 minutes until very tender. Drain well in a fine sieve and squeeze out any excess moisture.

Transfer cauliflower to a bowl with cheeses and egg. Season to taste and mix well.

Press mixture firmly out over tray to make an even 1cm-thick circle. Bake for 15-20 minutes or until lightly golden.

Spread passata over base. Top with chorizo, onion, capsicum and bocconcini.

Bake for a further 8-10 minutes or until cheese melts. Serve topped with basil leaves.


Making a pizza base with cauliflower is a great gluten-free, low- carb option – unlike the traditional version, which can provide a day’s dose of kilojoules in one meal!
